Coconut Panna Cotta

Serves 4

1cup (250 ml) heavy cream
1 cup (250 ml) coconut milk
1/3 cup (80 g) sugar
2 sheet gelatin (or 2 grams agar-agar + 2 teaspoons arrowroot)

If you're using gelatin:. Soak the gelatin in cold water. Place the cream, coconut milk and sugar in a medium sized pot. Bring to a boil stirring. Remove from the heat, leave to cool for 2 minutes, then add gelatin and stir well to dissolve it. Pour into small bowls or silicon molds. Chill for minimum 3 hours.

If you're using agar-agar and arrowroot: Heat the cream, coconut milk, sugar and arrowroot in a medium sized pot. When it starts to thicken, add agar-agar and bring to a boil. Cook for about 30 seconds. Pour into small bowls or silicon molds. Chill for minimum 2 hours.
